A CHRISTMAS SKI HOLIDAY BEFORE CHRISTMAS

There is something so special about being one of the first in the mountains before the ski season starts. The Erna Low management team were lucky enough to have a luxury ski holiday at the Chalet Montana in Val d’Isère the very first weekend in December, enjoying all the luxury of Consensio Chalets' sparkling service.

Meet the Erna Low Team

As we drove through the valleys from Geneva to Val d’Isère, all the Christmas lights were already up - and we felt the warm excitement of snow and Christmas ahead of us. Fir trees were laden with fresh snow and the sun was setting a deep red as we spun along in our private chauffeured car.

Arriving in our chalet, we were greeted with a glass of Perrier Jouët Champagne at the door by Jack, the Chalet Manager, and his team of four. We would be spoilt rotten by them for the next three days.

The Chalet Montana is spread over 6 floors - a swimming pool with panoramic views of Val d’Isère on the bottom floor, luxury bedrooms and a large cosy sitting room with wrap around balconies on the rest. And the chalet is perched right beside the world famous La Face piste so that you can literally drop out of your bed on to the slopes.

Every night we were treated to mouth watering bespoke suppers with specially selected wines - my favourite was the Sancerre from “Les Comptesses” 2015 on the first night. Our chef, Mike, treated us to an international menu that was inspired by his travels on luxury yachts round the world and travel escapades. Every single mouthful was lovingly thought through - and no ingredient would pass unless chosen specially by him at the shops as far as two hours from the chalet.

One of my favourite dishes lovingly cooked by Michael was Pork Belly, inspired by his grandmother’s home cooking where he grew up in South Africa - coriander and fennel braised pork. Michael told me that normally it would be eaten as Sunday lunch with “pap” a kind South African polenta.  The version we had was adorned with field to fork carrots, patty pans and flavoured with pomegranates on the side. Finally, it was grilled to perfection in the oven to produce crispy crackling on top. 

However, if pork is not to your liking the luxury of a Consensio dining experience is that it is completely bespoke and menus can be tailored to accommodate any dietary requirement or personal preference.
