Are there specific skiing or snowboarding requirements in Italy?

Yes, starting for the 2025/26 winter season, helmets are mandatory for everyone on the slopes in Italy including skiers, snowboarders and tobogganers. In addition if you use a ski slope (or toboggan run, etc.), you must have third-party liability insurance covering damage/injury you might cause to others.
